Lunchbox Cookies
These biscuits have been a family favourite for three generations.
They have a lot of ingredients and don’t look all that flash, but they are soft and chewy and really tasty.
You can make them chewy or crunchy depending on your preference
They have sultanas and hidden oats so you can give them to the kids without feeling too guilty.
Don’t let their name fool you, they can be eaten just about anywhere. They also freeze well for school lunches.

Makes: 30 servings
Look at all those wholesome ingredients, including two types of sugar
Ingredients
90g butter or margarine
½ cup brown sugar
1./2 cup caster sugar
1 teaspoons vanilla
1 egg
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon bicarbonate of soda
1 and ¼ cups plain flour
¼ cup self raising flour
¼ cup marmalade
1 cup sultanas
1 and ¼ cups rolled oats
Method
Preheat oven to 190ºC fan-forced (or 200 for normal ovens)
Line two or three baking trays with paper.
Combine butter and sugars and beat with an electric mixer until soft and fluffy.
Try and not eat all the batter
Add vanilla and egg and beat until combined.
Sift together the flours, spices and bicarb and add to the butter mixture. Stir to combine.
Fold in the oats, marmalade and sultanas.
They will spread so leave plenty of room
Drop teaspoonfuls of the mixture on the trays, leaving plenty of space for spreading.
Bake for about 10-12 minutes, or until lightly golden. Cook slightly less if you like your biscuits chewy and slightly longer if your prefer them crunchy.
They are a little ugly but they taste beautiful
