Luxurious Creamed Aubergines
I like to have this as a lush dinner for one, when you want something that looks pretty, tastes expensive, and is still most certainly vegetarian.
This is also a great way to get children to eat their veggies, with vegetable mash, vegetable main, and a nutrient rich spinach side.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 1 servings
Ingredients
Half an aubergine
1 small courgette
5 mushrooms
1 small sweet potato
2 handfuls of spinach
1 carrot
Tarragon
Thyme
Black pepper
Single cream
Method
Chop all the vegetables and put in a frying pan with a little olive oil on a medium heat for 5 minutes.
Peel and chop the sweet potato, and carrot and add to a saucepan of boiling water. Make sure they are covered and leave to boil for 15 minutes.
Add the seasoning to the frying vegetables, and turn to a low heat for 5 minutes
Once the potatoes and carrots have boiled drain them in a colander and put back in the saucepan with the butter. Mash together and season with black pepper.
Add 1 tblsp of cream to the frying vegetables and stir. Leave for another 2 minutes and it will turn plain old veggies into a creamy, rich dish.
Chop the spinach and serve - creamed aubergine and courgettes, vegetable rich mash, and a bit of fibrous spinach on the side - yum!
