Luxurious Potato Mash

Who doesn't love a good flavoursome potato mash? This recipe creates a wonderfully smooth and buttery mash that complements so many dishes.

I cook my spuds whole and in their skin so they keep fairly dry during the cooking process. This gives much better results.

For an additional flavour hit throw into the pot a few garlic cloves or even some roughly chopped onions. Then add them to the potatoes as you are mashing them, cheese or a herb pesto, of any herb, can also be added.


Preparation Time: 25minutes
Cooking Time: 35 -40 minutes
Makes: 2 servings

300 gm whole potato (pick a smooth creamy fleshed spud such as crème delight)
30 gm butter
50 ml cream
Salt and freshly ground black pepper


Place the potatoes into a pot of cold salted water and bring to the boil. Once boiling cook until they can be pierced to the middle with a skewer, approx. 25 - 30 minutes
When the potatoes are cooked remove them from the pot and allow to rest and drain for 10 minutes.


Peel the spuds and roughly chop them and place into a mouli.
Push them through the mouli into the pot they were cooked in.


Return the pan to the stove top and over a low heat add the butter, mix with a rubber spatula. Once incorporated add the cream and continue to mix until soft and smooth.

Ready to serve

Do not over mix, season to taste and serve.
