I cook my spuds whole and in their skin so they keep fairly dry during the cooking process. This gives much better results.
For an additional flavour hit throw into the pot a few garlic cloves or even some roughly chopped onions. Then add them to the potatoes as you are mashing them, cheese or a herb pesto, of any herb, can also be added.
