Luz Cacao Chia Pudding with Maple Almonds

A dish that takes advantage of Luz Almond Milk to create a dairy free variant of a chocolate pudding that can be either hot or cold, and is even healthy.

Preparation Time: 5 minutes
Cooking Time: 20 minutes (plus cooling time)
Makes: 4 servings

500mL Luz Cacao Almond Milk
2 tbsp vanilla extract
3tbsp raw cacao powder
½ cup chia seeds
pinch salt
2 tbsp pure maple syrup
1 tsp for almonds
¼ cup flaked almonds
coconut oil spray

Combine Luz Cacao Almond Milk, vanilla, cacao, chia and 2 tbsp maple syrup in medium saucepan over low heat. Stir continuously to ensure chia seeds separate to produce a uniform consistency.
Continue stirring for approximately 10 minutes, or until mixture has thickened and chia seeds have swollen.
Meanwhile place flaked almonds and additional teaspoon of maple syrup in a small frypan over low-medium heat. Spray generously with coconut oil then toss until golden brown.
Pour chia mixture into 4 small (125mL capacity) ramekins or bowls and sprinkle with maple almonds.
Serve hot or refrigerate to set and serve cold.
