Ma Po Tofu is a popular Sichuan dish of juicy pork mince, silky fresh tofu and hot tasty chilli bean paste. A great winter warming dish that is quick and easy to make.

Makes: 4 servings
Ingredients
3 tsp cornflour
2 tsp soy sauce
1 tsp oyster sauce
1 garlic clove, finely chopped
250g minced pork
1 tbsp oil
3 tsp red bean chilli paste
3 tsp preserved bean curd
750g firm tofu, drained, cubed
2 spring onions, sliced, plus extra shredded spring onion, to garnish
3 tsp oyster sauce, extra
2 tsp soy sauce, extra
1 1/3 tsp sugar
Method
Put the cornflour, soy and oyster sauces and the garlic in a bowl and mix well. Add the minced pork, toss to coat and leave for 10 minutes.
Heat a pan until very hot, add the oil and swirl to coat the sides. Add the minced pork and stir-fry for 5 minutes until browned.
Add the chilli paste and preserved bean curd, and cook for 2 minutes until fragrant.
Add the remaining ingredients and stir-fry for 3-5 minutes or until tofu is heated through.
Serve immediately, garnished with extra spring onions.
