Ma Po Tofu

A spicy and flavoursome tofu dish with those delicious Chinese flavours. Serve on a bed of rice to mop up the delicious juices.



Preparation Time: 15 mins
Cooking Time: 20 mins
Makes: 4 servings

Ingredients
500g firm tofu, cubed
150g beef/lamb mince
Bunch of spring onions, chopped finely
2 garlic cloves, minced
1 tsp chilli flakes

Sauce
3-4 tsp black bean garlic paste*
Chilli sauce (optional)
1 tsp sugar
4 tsp water
2 tsp corn starch

Marinade
1 tbs soy sauce
1 tbs dark soy
Pepper
1 tbs sesame oil

Method

Marinate the mince for 30 mins.

In a hot wok with oil fry garlic, chilli flakes and mince until cooked.

Add black bean paste, chilli paste and tofu. Stir-fry gently so the tofu does not break.

Add 1 cup water (or chicken stock) and cover with lid for 5 minutes.

Mix the water and corn starch to make a smooth paste and add to wok and mix immediately. Adjust seasoning.

Once sauce has thickened sprinkle chopped spring onion and serve with steamed rice.

Black bean paste can be found at regular supermarkets in the Asian section or in Asian grocers.

I think this dish usually uses silky tofu and turns out looking like a mince meat mixture.
