Macadamia Pistachio And Cranberry Cookie Bites
Bite sized yummy gems that can be eaten straight away or wrapped as a gift. Small pistachio and cranberry pieces give these cookies great texture and flavour.
They are gluten and lactose free and make a great snack or Christmas or Easter treat.

Preparation Time: 5 minutes
Cooking Time: 8 minutes
Serves: 25
Ingredients
1 cup macadamias, unsalted
1/2 cup pistachios, unsalted
1/2 cup dried cranberries
1 tbsp vanilla essence
1/3 cup caster sugar
1 tsp baking powder
1 egg
Method
Preheat the oven to 180C. Line 2 -3 baking trays with baking paper.
Blend the macadamias, vanilla essence and sugar until a smooth paste is formed. Scrape down the sides as needed.
Blend the egg, baking powder until just combined.

Add the pistachios and cranberries and blend into small pieces.

Roll teaspoon sized dough balls, place 4 cm apart on the baking trays and slightly press in the centre. Use a tbsp for larger cookies.

Bake for 8 minutes or until golden.
Cool on the tray for 5 minutes and transfer to a cooling rack. Enjoy!
