Macaroni Cheese with Crunchy Croutons
Macaroni cheese is my ultimate comfort food and the crunchy croutons on top give it the edge.
Preparation Time: 20 minutes
Cooking Time: 20-25 minutes
Makes: 4 servings
Ingredients
1 bread roll
3 tbsp melted butter
1 clove garlic crushed
1 tsp mustard (English mustard is ideal)
3 tbsp plain flour
300ml milk
350g macaroni pasta
250g medium or mature cheddar cheese
70g Parmesan cheese
Salt & pepper
Method
Preheat oven to 180c fan.
Tear up the bread roll into chunks, place on a baking tray and drizzle over 1 tbsp. of the butter.
Bake in the oven from around 5-6 minutes until golden and crispy.
Boil the macaroni pasta for a little less than the stated time of the packed, drain and set aside.
In a large saucepan, place 2 tbsp. of melted butter, garlic and mustard and heat through.
Add in the flour and stir through, cooking for a few minutes to create a roux.
Gradually add the milk a little bit at a time, constantly stirring and then cook for 5 minutes so that it thickens.
Add in the cheddar and 50g of parmesan and mix until melted through.
Next, add the drained pasta into the cheese sauce and give it a could mix until the pasta is coated.
Pour the macaroni cheese into a shallow dish, sprinkle with the crunchy croutons and bake in the oven for 20 minutes.
