Macaroni Cheese

An incredibly easy dish to make, macaroni cheese is a sure way of making your kids finish their lunch or dinner in no time. Add some vegetables subtly to it and you have them gobbling it all down without any fuss.

Preparation Time: 20 minutes
Cooking Time: 5 minutes
Makes: 6-8 servings

250g macaroni
250ml milk
1 tbsp butter / margarine
250g grated cheddar cheese
2 eggs
1 chopped onion
1 tbsp olive oil/ 1/2 tbsp butter
2 tbsp breadcrumbs

First, boil the macaroni in salted water containing a branch of thyme and butter. If you are watching your waistline, better switch to olive oil.

When done, pour into a colander and leave to drain. Remove the branch of thyme.

If you don't want your macaroni too soft, run cold water over the macaroni and leave to drain.

In a saucepan, heat 1 tbsp of butter and add the chopped onions. Brown slightly on high heat.

Beat the eggs and add to the milk before pouring into the saucepan containing browned onions.

Lower the heat, add 3/4 of the cheese. Sprinkle with salt and pepper.

Stir until the mixture curdles and leave the sides of the pan.

Add the macaroni to it and increase the heat. Stir continuously until no water is left.

Take off heat. Mix in the breadcrumbs.

At this stage you can pour it into a greased oven dish, sprinkle with remaining cheese, cover with foil and leave to cook for a few more minutes in the oven until the cheese melt. Alternatively, sprinkle with remaining cheese and serve as it is if you are in a hurry.
