Macaroni Soup with Canned Meat Sausage Fried Egg

This macaroni soup is a classic Hong Kong style breakfast. It is usually served with any combination of ham, slices of canned pork meat, sausages on top of soup, plus on side a plate of butter toast with fried/scrambled eggs.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
1 cup macaroni
2 cups homemade broth (or instant stock)
1/3 cup fresh corn kernels (or frozen)
1/3 cup fresh peas (or frozen)
2-3 cocktail frankfurts
4 slices of SPAM
2-3 eggs
1 tbsp olive oil
some salt and pepper ground (optional)

Method

  • Cook 1/3 cup corn kernels and 1/3 cup peas in boiling water for 1 minute, then drain.



  • Cook 1 cup macaroni in boiling water for 5 minutes until tender, then drain.



  • In a deep pan, pour in 2 cups broth, bring to a boil.

  • Add in drained macaroni and mixed veggies. When it starts to boil again, remove pan from strove.



  • Divide between serving bowls.



  • Meanwhile, heat 1 tbsp oil on a frypan over medium-high heat, add in sausages, SPAM slices and eggs, fry for 2 minutes.



  • Place them on top of the macaroni soup, sprinkle with some salt and pepper ground (optional), serve immediately.
