Macaroni Vegetable Cheese Pie

Macaroni cheese is generally associated with a lot of fat and not much that is healthy.

In this recipe I have added some vegetables to make it slightly more healthy than just pasta and cheese!

The result was delicious, and it still had that very cheesy macaroni taste! You could add as many vegetables as you like.

Preparation Time: 20 minutes
Cooking Time: 45 minutes
Serves: 2 - 3

Ingredients
1 cup macaroni
1½ tbsp butter
1½ tbsp flour
1 cup milk
½ tsp mustard powder
¼ tsp cinnamon
100 g cheese, grated
1 small egg, beaten
½ tbsp butter
1 tbsp shallots or spring onions
1½ tbsp tomatoes, chopped
¼ cup fresh corn kernels, cooked, taken off cob
2 - 3 tbsp Parmesan cheese

Method
  • Cook the macaroni as per packet instructions. Drain and rinse under cold water, and drain again.

  • Melt the butter in a wok or pan, and add the flour. Cook this for a minute, than slowly add the milk, stirring constantly.

  • Heat until this mixture boils, then turn down the heat and simmer gently for about 5 minutes.

  • Stir in the mustard and cinnamon, with about 2/3 of the cheese.

  • Season to taste, though it will not need salt, and cook gently, stirring often until the cheese has melted.

  • Take off the heat and stir in the egg. Cover this and set aside.

  • Preheat the oven to 180°/160° for fan forced.

  • Heat the remaining butter in a small pan and cook the spring onions, chopped tomatoes, and corn (you could add some fresh spinach here), and cook over a low heat for 5 to 10 minutes.

  • Put half the macaroni into a well greased ovenproof dish.

  • Pour half the cheese sauce over this, and mix well.


  • Pour the vegetables evenly over this.


  • Put the remaining macaroni into the pan where the cheese sauce is, and mix it up.

  • Spread this over the vegetables.

  • Top with the remaining cheese and the Parmesan. If you want a lower fat meal, leave out the Parmesan.

  • Bake this for about 45 minutes or until the top is a golden colour.


  • Let it stand for about 5 minutes before serving.
