Ingredients
4 smoked mackerel fillets
1 x 400g tinned chickpeas (240g drained)
60g spinach
200ml coconut milk
2 tbsp cornflour
2 tsb curry powder
1 tsp paprika
1 tsp cumin seeds
1 tsp mixed herbs
Method
Simmer coconut milk in a pan with herbs and spices.
Stir in drained chickpeas, mackerel, and spinach.
Simmer with the lid on top until spinach has wilted.
Stir in cornflour until liquid has thickened.
