Mackerel Salad

A light salad that is full of flavour, vitamins, minerals, and omega-3

Preparation Time: 5 minutes
Cooking Time: 6 minutes
Makes: 3 servings

Ingredients
2 smoked mackerel fillets
30g walnut halves
30g Stilton cheese
4 cherry tomatoes
40g mixed rocket & spinach leaves
1 small avocado
1 tbsp raspberry vinegar
Ground papaya seeds (or black pepper) to taste

Method



  • Grill the smoked mackerel for 6 minutes, then allow to cool (just enough so you can hold it).



  • Quarter the tomatoes and place in a bowl with the mixed rocket & spinach, and walnut halves.
  • Peel, pit, and cube the avocado and add to the salad.



  • Crumble the Stilton and add to the salad.
  • Flake the mackerel and add to the salad.



  • Splash over the vinegar and sprinkle over the ground papaya, then toss everything up to mix.
