Mackerel Salad
A light salad that is full of flavour, vitamins, minerals, and omega-3
Preparation Time: 5 minutes
Cooking Time: 6 minutes
Makes: 3 servings
Ingredients
2 smoked mackerel fillets
30g walnut halves
30g Stilton cheese
4 cherry tomatoes
40g mixed rocket & spinach leaves
1 small avocado
1 tbsp raspberry vinegar
Ground
papaya seeds (or black pepper) to taste
Method
Grill the smoked mackerel for 6 minutes, then allow to cool (just enough so you can hold it).
Quarter the tomatoes and place in a bowl with the mixed rocket & spinach, and walnut halves.
Peel, pit, and cube the avocado and add to the salad.
Crumble the Stilton and add to the salad.
Flake the mackerel and add to the salad.
Splash over the vinegar and sprinkle over the ground papaya, then toss everything up to mix.
