Imagine the scenario: your friends call and ask if they can drop over for a visit and you have nothing nice to offer them. Never fear! Madeleines are quick and easy to bake but they look like you’ve put in a lot of effort. You don't even have to have room temperature butter on hand.
These are best eaten on the same day as baking, but I doubt any will last longer than a few hours. They’re pretty, they're very easy to eat and delicious to boot, so be careful you don’t eat them all before your guests arrive!
Preparation Time: 2 minutes
Cooking Time: 15 to 20 minutes
Makes: 16 servings
Ingredients
3 eggs
1/2 cup caster sugar
3/4 cup plain flour
1/4 teaspoon baking powder
60g unsalted butter
Icing sugar
Method
Melt the butter and set it aside to cool.
Preheat your oven to 200°C and grease a Madeleine tray.
Using an electric mixer, beat the eggs and sugar together until they go pale and have doubled in size.
While your egg mix is beating you have time to sift the flour and baking powder into a separate bowl.
When the egg mix is ready, gently fold in the flour and butter.
Spoon your batter into the Madeleine tray and bake for 15 to 20 minutes.
Allow to cool and dust with icing sugar.
