Malt loaf is a delicious lunchbox snack; it is a sweet bread that uses plain flour instead of bread flour to make it softer and slightly more cake like. It tastes lovely on it own, but is absolutely delicious with butter, especially when toasted. Based on the brands I used, each slice is about 126 calories.

Makes: 20 servings
Ingredients
500g plain flour
300ml water
1 tbsp fast action yeast
1/2 tsp salt
4 tbsp malt extract
140g sultanas
2 tbsp black treacle
25g soya butter
Method
Mix together the flour, yeast, salt, and sultanas, and create a well in the centre.
Melt the malt extract and treacle in a saucepan, then add it to the mixture.
Gradually pour the water into the well to form a dough.
Knead for ten minutes, then divide the dough into two loaf tins.
Prove the loaves for about and hour, then bake in an oven pre-heated to 190 ༠C/ 170 ༠C fan/375 ༠F/5 Gas.
