Malteser Cheesecake

A mouth-watering dessert that will satisfy even the harshest of critics.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 8 servings


125g melted butter, plus extra to grease the tin
100g Marie biscuits
100-150g Maltesers (depending on how much of a sweet tooth you are)

800g Philadelphia cream cheese
200ml sour cream
200g icing sugar
1 tsp vanilla essence
100ml double cream
100-150g crushed Maltesers (keep some whole for decoration)

To prepare the base, put your Marie biscuits into a blender and break them down to a sand consistency. (If you do not have a blender, put the biscuits into a paper bag and crush with a rolling pin.)

Repeat step one with the Maltesers.

Put the two into a bowl and combine with melted butter.

Once your dry mixture is coated with the butter, put into your greased cheesecake tin. Press the mixture down firmly to create your base.

Place in the fridge to set while you make your filling.

To prepare your filling, collect your cream cheese, sour cream, icing sugar, vanilla essence and cream in a bowl.

Mix using a spoon or electric beater until combined.

Then fold the crushed Maltesers into the mix.

Get your base out of the fridge and layer the cream filling on top.

Decorate the top with whole Maltesers.

Put in the fridge for at least 30mins.

Take the cake out about 5 mins before serving, this way it will be easier to remove from the tin.
