Mango and Coconut Frozen Dessert Slices

This refreshing and healthy frozen dessert slice is a variation on the Mango Weis Bar. Only fresh and natural ingredients have been used making these mango and coconut slices a healthy summer time treat. Watch them disappear !

Only fresh and natural produce were used to make these healthy Mango and Coconut Frozen Dessert Slices.

Preparation Time: 4-Hours (includes freezing time)
Cooking Time: Nil
Serves: 4-6 Slices

1 Mango
300ml Coconut Cream
100g Blanched Almonds
2 Tablespoons Rice Malt Syrup (optional)

Peel and chop mango into bite-size pieces.

Use every bit of the mango, not just the cheeks.

Place chopped mango into a food processor and blend until the mango is smooth and resembles a puree.

Pour the pureed mango into the dish.

Puree the Mango until smooth - no need to add any other ingredients.

Place the tray into the freezer for approximately 60-90 minutes or until the mango has begun to set.

While the mango is in the freezer, place the Coconut Cream, rice malt syrup and blanched almonds into a food processor and blend until all the ingredients are well mixed.

Remove the mango from the freezer and transfer the coconut cream mixture over the mango.

Puree freshly made Coconut Cream, Blanched Almonds and Rice Malt Syrup and pour over the semi-frozen mango.

Return to the freezer for 3-4 hours.

Just before serving, remove the frozen dessert and thaw for a couple of minutes then cut into slices. Serve as required.

I used homemade Coconut Cream. I simply adjusted the coconut flesh to water ratio to give me the desired thickened coconut cream I wanted for this dessert.

If you don't feel compelled to make your own coconut cream, you can always use store bought instead.

Enjoy these mango and coconut frozen dessert slices any time of the year but especially during summer.

This looks amazing! Great work. We have a few mango trees out the back and I love inventing and trying new dishes, particularly for those with dietary requirements. Looks delicious. Great photos as well.

Thanks Naomi ... it was absolutely delicious - even if I say so myself ... my husband cleaned me out within minutes. My only regret is having only 1 mango available (hence the tiny amount I made on the day). Hope you enjoy xx
