Mango and Cranberry Toasted Muesli

I visited a store recently that inspired me to make my own muesli instead of paying an insane price at the supermarket.

I really didn't measure my ingredients, except for the rolled oats, coconut oil and maple syrup. It's up to you how much of each ingredient you add - make it up to your preferred taste.

Preparation Time: 5 minutes
Cooking Time: 50 - 60 minutes
Makes: Roughly 1kg, depending on what you choose to add.

3 cups rolled oats (I used the organic variety)
Dried cranberries
Dried mango, chopped into chunks
Coconut flakes
Dried organic blueberries
Flaked almonds
Sunflower seeds
Chia seeds
Unsalted cashews
Roasted almonds
1/4 cup of coconut oil
1/3 cup of maple syrup
Optional: I sprinkled 1 teaspoon of ground cinnamon over the mix prior to toasting.

Preheat the oven to 180 degrees for conventional oven, 160 degrees for fan forced.
Line a baking tray with baking paper (use a baking tray with a little depth to hold all the goodness in).
Mix all dry ingredients together in a large bowl - with the exception of dried fruit (I added my dried fruit and it was a bit hard at the end of the baking time).

Add maple syrup and coconut oil and stir through thoroughly.
Sprinkle cinnamon over mixture.
Spread evenly over baking tray.
Bake for 50 - 60 minutes, stirring every 10 minutes until all of the mixture is golden brown and toasted.
Add dried fruit and mix through.

Allow to cool completely before storing in an airtight container.
