Mango and Macadamia Chicken
Mangoes are just coming into season here in Australia, however if you live elsewhere, you can use tinned mangoes for this recipe.
Mango is a great accompaniment for chicken and the two textures marry well together.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2 - 3
Ingredients
1 tbsp olive oil
300 g chicken thighs, thinly sliced
1 medium red onion, thinly sliced
1 medium red pepper, thinly sliced
1 medium yellow pepper, thinly sliced
1 tbsp dry white wine
1 clove garlic
½ red chili, chopped, seeded
1 tbsp extra oil - macadamia if possible
1 medium mango, thinly sliced
1 bunch rocket
About 30 g macadamia nuts, toasted
Potatoes - optional
Method
Heat half the olive oil in a wok.
Add the chicken, and stir fry for about 5 to 10 minutes or until tender. Remove from wok.
Add the rest of the olive oil and then the onions and cook for a few minutes, and then add the two peppers, and stir fry for another minute or two.
Add the wine, garlic, chili and macadamia oil, and bring this to the boil.
Add the chicken back in, the mangoes, and most of the rocket.
Stir until the rocket is just wilted.
Serve the remaining rocket topped with the chicken mixture and macadamia nuts.
I microwaved a few potatoes in their jackets and had this with the chicken, and you could also make rice or even baked potatoes.
