Mango and Mascarpone Cream Filled Brandy Baskets

Brandy Baskets are one of my favourite things to make at Christmas time. I thought I should make some as the baskets are still available at the supermarkets.

Brandy Baskets a Christmas favourite

Preparation Time: 15 minutes
Cooking Time: 0
Makes: 6 servings

Packet of 6 brandy baskets
1 teaspoon of vanilla extract
300 mls thickened cream
1 tub mascarpone cheese
3 tablespoons of agave nectar
2-3 fresh mangoes

Place cream, mascarpone, vanilla and agave nectar in a beater mixer bowl and beat on high until thick and whipped like whipped cream.

Cut the sides off the mango and slice across diagonally and then horizontally to dice the mango.
Slice mango off the skin and and set aside.

Spoon three tablespoons of cream mixture into each brandy basket.

Fill baskets to this level

Top each basket with a generous serve of mango.
Serve immediately as cream mixture will make the baskets soft.
