Mango Curd

If you fancy a change from jam, a beautiful fruit curd is a delicious treat on toast. It is so easy to make and is quicker than making jam too. Lemon is the most common curd, but sometimes it is nice to have something a bit different. This mango curd definitely fits the bill.

Preparation Time: 25 minutes
Cooking Time: 15 minutes
Makes: 1 small jar

Ingredients
2 mangos
100g margarine
3 eggs
1 tbsp Truvia sweetener (100g caster sugar)
1 tsp cornflour

Method



  • Peel, pit, and slice the mangos.



  • Puree the mangos in a blender.



  • Heat the mangos over a bowl of boiling water and stir in the margarine until it has melted.
  • Take off the heat and allow to cool.



  • Separate the eggs and beat the yolks with sweetener/sugar.
  • Gradually incorporated the mango mixture.



  • Return the mixture to the heat in a saucepan and stir continuously until it starts to thicken.



  • Add the cornflour and stir continuously until it is thick enough to spread.



  • Allow the curd to cool before jarring.
