Mango Icy Poles

Beat the heat and be in tropical heaven with these easy lactose free mango icy poles. Great for the kids.



Preparation Time: 10 minutes
Cooking Time: 4 hours to set
Serves: 6

Ingredients
3 ripe mangoes diced or 500g frozen mango
250g blueberries (optional)
400 ml coconut milk (lite) OR 2 cups coconut yogurt.

Method
  • Place mango and coconut milk into a blender and purée until smooth.
  • Pour mixture and six blueberries into molds.
  • Freeze overnight or until set.

  • Tips
    Icy pole molds are available at most supermarkets, discount and kitchenware shops.
    Use frozen mango for quicker freezing time.
