Mango Prawn Cocktail

This is a quick, easy recipe which I made for an entree for Christmas lunch.

You could make it even easier by buying cooked, shelled prawns however I prefer cooking my own.

The flavours of mango, prawns and sour cream go beautifully together.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 3 - 4 servings

150 ml sour cream
1 large ripe mango
200 g prawns


½ tbsp chives, chopped
Parsley, chopped (optional)
Slices lemon (optional)

Bring a bit of water to the boil, and add the prawns.

Cook for no more than 2 - 3 minutes or they will be tough.

Peel the prawns when cool, and cut into two or three pieces.

Mix the chives into the cream.

Peel and mash the mango a bit, leaving small pieces i.e. not totally smooth when mashed.

Add this to the sour cream mixture.


Allow to stand for about one hour so that the cream goes through the prawns.

Serve cold garnished with a slice of lemon and a sprig of parsley (both optional).
