Mango Prawn Cocktail

This is a quick, easy recipe which I made for an entree for Christmas lunch.

You could make it even easier by buying cooked, shelled prawns however I prefer cooking my own.

The flavours of mango, prawns and sour cream go beautifully together.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 3 - 4 servings

Ingredients
150 ml sour cream
1 large ripe mango
200 g prawns

½ tbsp chives, chopped
Parsley, chopped (optional)
Slices lemon (optional)

Method
  • Bring a bit of water to the boil, and add the prawns.

  • Cook for no more than 2 - 3 minutes or they will be tough.

  • Peel the prawns when cool, and cut into two or three pieces.

  • Mix the chives into the cream.

  • Peel and mash the mango a bit, leaving small pieces i.e. not totally smooth when mashed.

  • Add this to the sour cream mixture.


  • Allow to stand for about one hour so that the cream goes through the prawns.

  • Serve cold garnished with a slice of lemon and a sprig of parsley (both optional).
