Mango Pudding

When we think of mangoes, we generally think of Summer and all the delicious fruits that are in season. This fail proof recipe is easy for everyone and anyone to follow and although it is the middle of Winter it still makes for the perfect dessert.

Preparation Time: 10 minutes
Cooking Time: 1-2 hours refrigeration
Makes: 6 servings

2 85g packets mango jelly
1 egg (optional)
175ml milk
85ml evaporated milk
1 100g can of mango slices or flesh of 1 fresh mango

Add the jelly powder into a large bowl.
Pour 225ml of hot water to the powder and stir until dissolved.

Pour 110ml of cold water and stir to combine.

Add in fresh milk and evaporated milk, stirring to combine.

Process the mango slices into a puree.

Add the mango puree into the jelly mixture.

Whisk in the egg (optional)

Pour the mixture into jelly molds, ramekins or servingware.

Refrigerate for 1-2 hours or until firm to the touch.
Serve as is or if you wish to turn the pudding out, dip the jelly mold/servingware briefly in hot water and then turn out onto a platter.

Serve with evaporated milk and garnish as you please
