This is not your traditional pie, it's basically just a really tasty crunchy puff pastry thing and it's so easy to make.

Margherita Pie cut into four
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves: 2-4
Ingredients
6 cherry tomatoes washed
125 g traditional mozzarella cheese
2 tablespoons of grated tasty cheese.
1/2 teaspoon of dried basil
2 tablespoons of olive oil
Salt and pepper to taste
Method
Preheat oven to 150 degrees fan forced
Slice the mozzarella about 1/2 cm thick to make about 6 slices.
Cut the cherry tomatoes in half and set aside.
Line a baking tray with foil.
Take the pastry from the freezer and drizzle on a little olive oil and brush over the pastry.
Next place the mozzarella slices to cover the base just in the middle of the pastry leaving an edge for a crust, then fill in the gaps of the cheese with the tomato halves skin side down.
Sprinkle over the dried basil and tasty cheese then season with salt and pepper to taste.

Margherita Pie ready to cook
Drizzle some more olive oil and then place in the oven for 20 minutes.
When cooked, remove from the oven and allow to cool slightly before removing from the foil.
Cut into four and serve as is for a snack or light lunch or serve with a garden salad for a bigger meal.
