A summer salad, with marinated chicken which can be cooked on the BBQ or stove top. For more serves just increase ingredient portions.

Makes: 2 servings
Ingredients
2 chicken tenderloins
2 spring onions
1 tomato
1 small cucumber
1 1/2 cups baby spinach
200 grams goats cheese
Chicken Marinade
3 tablespoons soy sauce
1 tablespoon honey
1 teaspoon minced garlic
Method
Place all chicken marinade ingredients in a container with the chicken tenderloins and let soak for 5 - 20 minutes
Chop the spring onions, tomato, cucumber and goats cheese into small pieces
Cook the chicken then cool and chop into small pieces and add to salad
