Marinated Chicken Breasts with Mango Butter and Dijon Roast Potatoes Broccoli

This is made using chicken breasts and the secret to this is not to cook the breasts for long or they dry out.

This meals was very moist and almost melted in my mouth.

Preparation Time: 20 minutes plus 20 minutes to marinade
Cooking Time: 8 minutes
Serves: 2 - 3

Ingredients
1 tbsp olive oil
½ tsp turmeric
½ tsp paprika
¼ tsp pepper
3 chicken breasts

For the mango butter
35 g butter
¾ tbsp mango chutney
¾ tsp lemon juice

For the potatoes and broccoli
2 cups potatoes, chopped
About 1½ cups broccoli florets
Parmesan cheese, shredded, to taste
2 tbsp olive oil
1 tbsp Dijon mustard
½ tbsp lemon juice
½ tbslp spring onions, chopped
½ tsp sugar
¼ tsp garlic, minced
Bit of salt and pepper

Method
  • Mix the olive oil with the turmeric, paprika and pepper, and turn the chicken breasts over in this mixture so they are all coated.

  • Leave the chicken to marinate for about 20 minutes.

  • Preheat the oven to 180º/160º fan forced and put some non stick baking paper in a baking tray.

  • Arrange the chicken pieces on baking paper so they are not touching.


  • Bake in the oven for about 8 minutes, depending on their thickness.

  • For the mango butter
  • Mash the butter in with the chutney and lemon juice, until it is creamy and soft.

  • When the chicken is done, serve each portion of chicken with the cold mango butter on top - it will melt in the warmth of the chicken.

  • For the potatoes
  • Preheat the oven to 200º/180º fan forced and line a baking tray with aluminium foil, sprayed with a cooking spray.

  • Chop the potatoes into small pieces, and put in a bowl and set aside.

  • Combine the olive oil, mustard, lemon juice, spring onions, sugar, garlic, salt and pepper in a small bowl.


  • Toss the potatoes in 2/3 of the mustard mixture.

  • Sprinkle the Parmesan on half of the baking sheet, and put the potatoes directly over the Parmesan.


  • Bake the potatoes for about 25 minutes.

  • Toss the broccoli with the rest of the mustard mixture and after the potatoes are roasted, remove them from the oven and stir lightly.

  • Put the broccoli on the other side of the pan, and put it back in the oven for about 5 -10 minutes or until the broccoli is roasted.


  • Serve with lemon wedges, and chicken.
