Marinated Salmon with KiwiMango Relish and Cream Cheese Mashed Potatoes
I am always trying out new recipes for salmon which is supposedly the healthiest fish, and most of them work out very well as long as you do not overcook the salmon.
The flavours of this meal were excellent together!
Preparation Time: 15 minutes plus 10 minutes marinating
Cooking Time: 30 minutes
Serves: 2
Ingredients
For the potatoes
½ kg potatoes, peeled and chopped
¼ cup skim milk
115 g Philadelphia cream cheese
¼ tsp onion powder or flakes
¼ tsp salt
Bit of pepper
Bit of paprika
For the salmon
½ tbsp honey
1 tbsp soy sauce
½ tsp oil
Bit of pepper
2 pieces thick salmon (about 250 g)
For the relish
¼ cup mango, diced
¼ cup kiwi fruit, diced
Bit of coriander, chopped finely
1/8 cup orange juice, freshly squeezed
Method
For the potatoes
As the potatoes take longer than the salmon, start off with these, by placing the cut potatoes in water and bringing to the boil.
Boil for about 20 minutes or until the potatoes are tender.
Add the cream cheese, onion and milk.
Mash the potatoes and add some salt and pepper.
Put on the plate and sprinkle some paprika on top.
For the Salmon
Meanwhile, combine the honey, oil, pepper in a zip lock bag or similar, and add the salmon pieces.
Seal the bag and mix till the salmon is coated and allow to marinate for 10 minutes.
Meanwhile mix the mango, kiwi fruit, orange juice and coriander until combined.
Heat a fry pan and add a tiny bit of oil, or spray. Take the fish out of the bag, and discard the marinade.
Add the fish to the pan and cook for about 5 minutes on each side or until the fish flakes slightly - do NOT overcook.
Add to the plate with the mashed potatoes.
Top with the prepared fruit relish.
