Marmalade Cakes
These cakes make for a wonderful breakfast, brunch or afternoon tea. They are sweet, delicious, and the kids will love them.
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 12
Ingredients
125 grams soft butter
1 1/2 cups self raising flour
3/4 cup castor sugar
2 eggs
1 teaspoon vanilla essence
1/2 cup milk
1/4 cup orange marmalade
Method
Preheat oven to 180 degrees. Line a 12 hole muffin pan with paper cases.
In a large bowl beat the butter, vanilla and sugar until fluffy and light in colour.
Add the eggs one at a time, beating, until they are well incorporated.
Sift in half the flour and pour in half the milk, mix thoroughly with a spoon. Repeat this process until it forms a smooth batter.
Dollop the marmalade on top and swirl it in gently.
Spoon the mixture evenly between muffin pans.
Bake in preheated oven for 15 minutes until golden.
