Vermicelli is a very fine long pasta, a bit like hair pasta, and and unlike most pasta which are used for savoury dishes such as bolognese or carbonara, vermicelli is often used for milk based puddings. This one uses marmalade to give it a strong, but not too bitter flavour. Based on the brands I used, each portion should be about 277 calories.

Ingredients
50g Xylitol sweetener (or granulated sugar if you prefer)
180g vermicelli
1.1L light soya milk
100g seedless raisins
2 tbsp orange marmalade
3 large eggs
Method
Soak the vermicelli is milk for 10 minutes.
Mix in the marmalade and raisins.
Beat the eggs with sugar, the stir into the pudding.
Bring to the boil, then simmer for half an hour.
