Marsala is quite a good wine to cook with, and it has a slightly sweet taste.
Here I have used it with chicken breasts to create a tasty meal. I also made baked potatoes and some broccoli with this.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 2
Ingredients
2 chicken breasts, boneless
2 tbsp plain flour
¼ tsp oregano
2 tbsp oil
2 tbsp butter
¾ cup mushrooms, sliced
¼ cup Marsala
2 tbsp sherry
Method
Cut any fat off the chicken, and pound it till it is thin.
Mix the flour, some salt and pepper and the oregano in a pie dish.
Melt the oil and butter in a fry pan and allow to boil.
Dip the chicken in the flour mixture, and shake off the excess flour.
Lightly brown it in the pan for about 2 minutes.
Turn over the chicken and add the mushrooms.
Cover the pan and simmer for about 5 minutes, turning the chicken once.
Do not overcook, or the chicken will be dry - I served it with baked potato.
