Mascarpone and Strawberry Wontons

This recipe could be made with thickened cream however to keep the calories down, I have used mascarpone.

If you want to get the calories down even further, substitute low fat ricotta cheese instead of Mascarpone, though it will not be quite as nice.

These are little mouthfuls of a sweet, where eating just one can satisfy a sweet tooth craving and thus keep blood sugar levels down - which is what I need to do!

Preparation Time: 15 minutes
Cooking Time: 8 minutes
Makes: 18 pieces

9 wonton wrappers
2 tbsp sugar
½ tsp cinnamon
25 g unsalted butter
125 g Mascarpone
1 tbsp icing sugar
1 tsp lemon juice
125 g strawberries, sliced

Preheat the oven to 200°/180° fan forced.

Mix the sugar and cinnamon.

Cut the wontons into quarters.


Brush with the melted butter and add a layer of the spiced sugar.


Bake these on a tray lined with baking paper for about 10 minutes, checking after about 8 minutes. When they are brown and crisp, they are ready, so be careful not to let them burn.

Let them cool on a wire rack.


Beat the mascarpone and icing sugar with a fork, and add the lemon juice.

Spread a bit over the 12 crisp wontons.

Top with half the chopped strawberries.


Repeat with another layer of wontons, mascarpone mixture, and strawberries. The wontons need not be on evenly and can be at an angle.

Put the remaining wontons on top of this and dust with a bit of extra icing sugar.

Delicious mouthfuls!
