Mashed Potato and Sweet Potato Cakes with Bacon

These potato cakes are first boiled, then mashed, and the cooked bacon is added before frying them.

I used both potato and sweet potato as I had some sweet potato I wanted to use, however this would also work with just potato.

They make a nice accompaniment and are good as a snack both hot and cold.

Preparation Time: 30 minutes
Cooking Time: 35 minutes
Serves: 4 as accompaniment

200 g potatoes
100 g sweet potato
2 tsp butter
3 short cut bacon rashers, chopped small
1 tbsp chives, chopped
2 tbsp rolled oats
Bit of flour
1 very small egg
Extra plain flour

Boil a saucepan of salted water, and add the potatoes. Cook till they are done - about 20 minutes, depending on the size you cut them.

Drain them well and put them back on the still warm heat to get rid of any moisture.

While the potatoes are cooking, cook the bacon pieces until they are brown, or crisp.

Mash the potato with the butter, add some salt and pepper, though you do not need a lot of salt due to the bacon being salty.

Add the bacon, chives, rolled oats, and beaten egg.


At this stage, if they are too runny, add some flour into the mixture.

I then put them into the fridge for about 30 minutes, however if in a hurry, need not bother with this.

With floured hands, form the potato mixture into flat cakes, any size will work.

I also put a bit of flour on the outside to hold them together as my egg was a bit big

Heat some oil in a pan and add the potato cakes and cook for about 4 minutes on each side, or until they are golden.

I served them with my Dijon and white wine rabbit.
