Mashed Potato and Sweet Potato Cakes with Bacon

These potato cakes are first boiled, then mashed, and the cooked bacon is added before frying them.

I used both potato and sweet potato as I had some sweet potato I wanted to use, however this would also work with just potato.

They make a nice accompaniment and are good as a snack both hot and cold.

Preparation Time: 30 minutes
Cooking Time: 35 minutes
Serves: 4 as accompaniment

Ingredients
200 g potatoes
100 g sweet potato
2 tsp butter
3 short cut bacon rashers, chopped small
1 tbsp chives, chopped
2 tbsp rolled oats
Bit of flour
1 very small egg
Extra plain flour

Method
  • Boil a saucepan of salted water, and add the potatoes. Cook till they are done - about 20 minutes, depending on the size you cut them.

  • Drain them well and put them back on the still warm heat to get rid of any moisture.

  • While the potatoes are cooking, cook the bacon pieces until they are brown, or crisp.

  • Mash the potato with the butter, add some salt and pepper, though you do not need a lot of salt due to the bacon being salty.

  • Add the bacon, chives, rolled oats, and beaten egg.


  • At this stage, if they are too runny, add some flour into the mixture.

  • I then put them into the fridge for about 30 minutes, however if in a hurry, need not bother with this.

  • With floured hands, form the potato mixture into flat cakes, any size will work.
  • I also put a bit of flour on the outside to hold them together as my egg was a bit big


  • Heat some oil in a pan and add the potato cakes and cook for about 4 minutes on each side, or until they are golden.

  • I served them with my Dijon and white wine rabbit.
