Matcha Strawberry Daifuku

Daifuku or Daifuku mochi is a Japanese sweet that is made of a round mochi (glutinous rice cake) with a sweet filling. The name Daifuku in Japanese literally means 'Great Luck'.

Daifuku comes in many filling varieties ranging from sweetened red bean paste, fruits, crushed melon paste and different colours including white, green, pinks and much more. They are a very popular sweet in Japan and are gaining popularity all over the world.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 6 pieces

6 fresh strawberries
100g glutinous rice flour
10ml olive oil
20g green tea powder
10g cornflour
2 tbsp water
Icing sugar to dust

Wash and hull the strawberries, set aside.

In a large bowl, sift together the glutinous rice flour and cornflour.
Add in the green tea powder.

Add in the olive oil and stir to combine the ingredients.

Pour in the water and stir until the ingredients combine and form a paste.

Place the bowl into the microwave and cook on low for 1 minute. Remove from the oven and stir the paste for it to come together.

Place in the microwave again and cook for 15 seconds, then remove and stir.
Repeat for 4 more times.

Set aside to rest until the green tea paste is slightly cooled and warm to the touch.

Lightly flour hands and roll the green tea paste into circles and flatten.

Place a strawberry in the centre and wrap it up.

Roll the green tea paste up so that it becomes a circle with the strawberry inside.

Served dusted with icing sugar.

Glutinous rice flour can be bought from your local Asian grocers.

Thanks Tash! I ended up with a bit of mess too, still trying to get better at it and not make such a great mess like the pros. Will take some practice :P
I should add that by 'so sweet' I don't mean they're overly sugary sweet. I obviously haven't tried them yet. Just that I love the idea. ;)
These are so sweet! I don't think I've had mochi with fresh fruit inside before. Although I did make mochi once. It was certainly an experience. I ended up with the paste/dough everywhere!

Might have to give this a try. :)
