This is a spicy Indian rice dish with chicken and veggies all cooked together. It is best served with a refreshing cucumber raita ( cucumber in yogurt) and pickles.

Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
2 cups basmati rice
3 potatoes
1 green chili
1 onion sliced thinly
1 cup fresh/frozen peas
1 tsp cumin
1 tomato
1 tsp ginger and garlic paste
2 tbsp ghee
1 tsp chilli powder
1/4 tsp turmeric powder
500 g chicken breast cleaned and cut into small cubes

Ingredients for cucumber raita
1 small cucumber
1 onion
Few mint leaves
1 cup plain natural yogurt
Salt
Pepper
Method
Boil rice in salted water till half done and then drain dry.
In a casserole ( it should be large enough to hold the rice, chicken and vegetables together), heat ghee and fry sliced onion until golden brown.

Braise sliced onion until golden brown
Add chicken and spices and braise till chicken is well coated with spices and fairly dry.

Add chicken pieces
Add tomatoes, lower heat and leave to simmer for a few minutes until chicken is half done.
Add potatoes and peas and continue simmering until potatoes are cooked.

Leave to simmer on low heat
Mix in the rice, carefully tossing it up and down until all is distributed evenly.

Toss everything
Lower heat and steam for around 30 minutes.
When done, sprinkle with a few strands of fried onions.
Meanwhile, prepare salad by slicing thinly the cucumber, a small onion and a few mint leaves. Mix in 1 cup of plain yoghurt, salt and pepper.

Ingredients for raita
Serve rice accompanied with the refreshing salad.
