Meatballs on Couscous
Simple and delicious. This one will be a winner with the whole family.
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
500 grams of mince (I used pork and veal mince)
2 teaspoons dried mixed herbs
1 egg
Oil
1 jar tomato pasta sauce
1 cup couscous
1 cup stock (I used chicken stock in cube form mixed with boiled water)
Salad vegetables- lettuce, tomatoes, cucumber, carrot, red capsicum ( I also used cheese)
Method
In a bowl mix the mince, egg and dried herbs. Make sure they are well combined.
Heat oil in a fry pan over medium heat. While it's heating roll the mince into small balls using your hands. Make them a little smaller than a golf ball.
When the pan is hot, place the meatballs into the pan. Cook without turning for about 5 minutes until they are brown on the bottom.
Flip each meatball and cook for a further 5 minutes.
While they are cooking, make your couscous. For those who are new to couscous place the cup of couscous into a bowl, add the stock and cover with a tea towel. Leave it there until you're ready to dish up. If you need to make more or less couscous it's always the same quantity of couscous to stock/water.
Now the meatballs should be brown on the top and bottom. Take them out of the pan onto a plate.
Into the still hot pan pour the bottle of tomato pasta sauce. Mix until bubbling.
Add the meatballs back to the pan and cover with the sauce, turn down the heat. Cook for another 5-10 minutes.
While they are cooking prepare your salad. I prepare straight onto our dinner plates but you can also make up a bowl for the table.
Now you're ready to plate up. Using a fork fluff up the couscous to separate the grains. Spoon onto the plates and arrange the salad onto the plates.
Place the meatballs onto the couscous with some of the sauce on top. Enjoy!
