Meditarabian Tuna Pasta Salad LowFat

This low-fat, healthy, Halal tuna pasta salad, with a Mediterranean and Arabic twist beats tuna-mayo any day.




Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 serving

Ingredients
3 cups of pasta shells
1 garlic clove (optional)
Pinch of salt
Paprika (1/4 tspn) (optional)
Za’atar (1/4 tspn)
Chives (1/2 tspn)
Black peppercorns, crushed (1/2 tspn)
Extra virgin olive oil (2 tablespoons)
1 can of tuna
1 can of tinned butter beans
3-4 tablespoons cream cheese (or you can use low fat yogurt)
1 tablespoon of tahini paste (or humus if you don’t have paste)


Method

  • Boil the pasta for about 10 minutes or till al dente. In the meantime, heat the tinned butter beans in a separate pan on medium heat for 5 minutes till it is warmed well.

  • Chop the garlic clove and chives. Add to a mixing bowl along with the extra virgin olive oil, salt, pepper, paprika, Za’atar and tahini paste. Mix.

  • Add tinned tuna.

  • Add the cream cheese, or yogurt, and mix till smooth.

  • Wash and drain the beans, add them to the bowl.

  • Wash and drain the pasta shells. Add them to the bowl.

  • Mix it all together. And there’s your lunch! (please note, the picture may vary slightly from the recipe i.e. there may not be garlic clove and paprika present).
