Mediterranean Bread

Mediterranean food is colourful, flavoursome, healthy, and are great ingredients for making bread. Based on the brands I used, each slice is about 136 calories.

Preparation Time: 3 hours
Cooking Time: 20 minutes
Makes: 8 servings

Ingredients
275g wholemeal bread flour
75g Greek green olives stuffed with red peppers
75g sun dried tomatoes in olive oil
1 1/2 tsp fast action yeast
1/2 tsp salt
1 tsp dried thyme
200ml water

Method
  • Mix the flour, salt, yeast, and tomatoes together.
  • Create a well in the flour and gradually pour in the water to form a dough.
  • Knead the dough for ten minutes, the prove for about an hour.
  • Punch down the dough and shape it into a rectangle.
  • Chop the olives and sprinkle lengthwise along the middle of the dough with the thyme.
  • Fold the two sides of the dough lengthwise to the middle so that it covers the olives.
  • Prove for another hour.
  • Pre-heat the oven to 220 & #3872 ;C/ 200 & #3872 ;C fan/425 & #3872 ;F/7 Gas.
  • Make eight snips on either side of the dough with a pair of scissors.
  • Bake.
