Mediterranean Chicken Schnitty Sandwich
After my recent visit to
Schnitz , I've decided to give my average chicken schnitzel sandwich a 'makeover' with some Mediterranean flavour.
The addition of hommus, marinated eggplant, vintage cheese and a hint of wasabi mayonnaise certainly add the winner ticks to this magnificent sandwich.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4 servings
Ingredients
4
chicken breast schnitzel
8 slices of sourdough
200g marinated eggplant
4 slices
vintage cheese
2 tablespoon
hommus
1 tablespoon wasabi mayonnaise
100g fresh garden salad
2-4 cheery tomato
10ml
aged balsamic vinegar
1 tablespoon garlic-infused olive oil
Salt and black pepper to season
Method
Heat 1 tablespoon garlic-infused olive oil in a large frying pan over medium heat. Cook chicken schnitzels until golden.
Cut into slices and transfer to a plate.
Toast the sourdough bread until golden.
Lightly drizzle some balsamic vinegar over mixed salad and tomato. Set aside.
Spread half the sourdough with hummus.
Place 2 slices of vintage cheese on the remaining sourdough bread.
Top with schnitzel. Drizzle with some wasabi mayonnaise on top.
Place a slice of marinated eggplant on top.
Garnish with mixed salad.
Sandwich with hommus-topped sourdough.
Serve immediately.
This is a great hearty lunch/light meal to make when you don’t know what you want.
