Mediterranean Potato Salad

A Mediterranean diet is a healthy way of life and eating. Try omitting mayo-based sauces by using herbs, a splash of lemon juice or vinegar and a drizzle of olive oil to dress and flavour vegetables and salads. It’s all about cooking with fresh locally grown ingredients.

My grandmother’s Potato Salad is definitely a family favourite that has been passed down between generations and best of all is simple and requires little preparation for such a delicious dish. We often serve it during the summer months and at barbecues.

Mediterranean Potato Salad.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 2-3 servings

5 Potatoes
½ Cup of Black Olives
1 Teaspoon Oregano
Fresh Basil leaves
Extra Virgin Olive Oil
Salt and Pepper to taste

Peel potatoes and chop into large cubes

Chop potatoes into large cubes.

Add potatoes to boiling water and cook for approximately 15-minutes or until the potatoes are cooked and tender. Be careful not to over-cook, the potatoes should still retain some firmness.

Rinse and drain potatoes.

Add Black Olives, Oregano, Basil to the cooked potatoes.

Add Black Olives, you can also add Green and Stuffed Olives for a little variation.

Start adding herbs such as Oregano.

A Mediterranean Potato Salad is incomplete without fresh Basil.

Drizzle a little extra virgin olive oil and add a little salt and pepper to taste.

Mix all ingredients thoroughly and serve.
