Mediterranean Roast for One
You needn't travel further than your kitchen to experience a taste of the Mediterranean.
Preparation Time: 2 minutes
Cooking Time: 45 minutes
Makes: 2 servings
Ingredients
3 peppers
2 garlic cloves
Handful of parsley
Handful of thyme
Handful cherry tomatoes
2 chicken legs
chunk of ginger root
Method
Bash the garlic and add to a pyrex dish.
Add the chicken.
Add the rest of the herbs to the pan, add the oil and place in the oven for 30 minutes at 160 degrees.
Remove the chicken from the oven and add 100ml of water.
Add the peppers to the chicken and coconut oil and place the dish back in the oven for 15 minutes.
Remove from the oven.
Serve immediately and enjoy a mouthful of the Mediterranean.
