Mediterranean Roast for One

You needn't travel further than your kitchen to experience a taste of the Mediterranean.



Preparation Time: 2 minutes
Cooking Time: 45 minutes
Makes: 2 servings

Ingredients
3 peppers
2 garlic cloves
Handful of parsley
Handful of thyme
Handful cherry tomatoes
2 chicken legs
chunk of ginger root



Method
  • Bash the garlic and add to a pyrex dish.



  • Add the chicken.



  • Add the rest of the herbs to the pan, add the oil and place in the oven for 30 minutes at 160 degrees.



  • Remove the chicken from the oven and add 100ml of water.



  • Add the peppers to the chicken and coconut oil and place the dish back in the oven for 15 minutes.



  • Remove from the oven.



  • Serve immediately and enjoy a mouthful of the Mediterranean.
