Mediterranean Salad

My mum described this salad as tasting like pizza without the base. Easily solve: add some flatbread to soak up the juices, then it is a delicious lunch that is indulgently healthy.

Preparation Time: 10 minutes
Cooking Time: 2 minutes
Serves: 3

Ingredients
120g sun dried tomatoes
120g roasted red peppers, chopped
100g green olives stuffed with jalapeƱo peppers
80g feta cheese, cubed
75g chorizo, diced
60g salad leaves
60g pine nuts
1 tsp nori flakes

Method
  • Mix together pine nuts and chorizo.
  • Mix together sun dried tomatoes and feta.
  • Mix together olives and peppers.
  • Grill all of these mixes for two minutes.

  • Place the salad leaves in a bowl.
  • Mix in all the other ingredients.
