Mediterranean Tofu Scramble

This protein filled, immensely satisfying vegan meal feels both like an improved scrambled eggs recipe, and a healthy, light pizza dish.



You will love the salty, meaty flavours and textures, and will want to enjoy for breakfast, lunch and dinner!

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 5 servings

Ingredients
1 tsp olive oil
200g firm tofu
1/2 tsp turmeric
1/2 tsp curry powder
250g sundried tomatoes, finely chopped
200g black pitted olives, finely chopped
80g spinach, roughly chopped
6 spring onions, finely sliced

Method
  • In a large wok, heat the oil until warm and add the tofu. Break up and scramble into small chunks.

  • Over a high heat, add the turmeric and curry powder, mixing through well for 5 minutes.
  • Toss through the tomatoes, olives, spinach and onions, and continue to stir through for a further 5-10 minutes.

  • Serve simply on its own, or as a topping on a toasted pita or slice of thick bread.
