Melt-in-Your-Mouth Lemongrass Chicken

Tucking into this succulent, mouthwatering dish will transport your senses to an exotic, island paradise! The tangy lemongrass flavours will be complemented nicely with a serve of brown rice and vegetables, as pictured.

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
3 skinless chicken breasts, cut into thin strips
2 stalks lemongrass stalks, cut finely
1 tsp white pepper
1 tbsp ginger, crushed
2 tbsp light soy sauce
2 tbsp olive oil
1/2 cup spring onions
1/2 cup coriander leaves

Dressing
2 tbsp fish sauce
2 tbsp lime juice
2 tsp ginger, crushed
1 red chilli, cut finely
1 stalk lemon grass, cut finely
1/4 cup coriander

Ingredients


Method
Combine lemongrass, pepper, ginger and soy sauce in a bowl and mix well.

Making the marinade


Lay the sliced chicken breasts in a shallow dish and coat with the marinade made above. Allow to sit for at least 10 minutes.

In another bowl, mix together the dressing ingredients and set aside.

Heat the oil in a frying pan over a medium heat. Add chicken and cook until just cooked through - the chicken should be very tender and moist, but will also be slightly browned.

Heating it up!


Serve with rice, salad, jacket potatoes or whatever you desire. Sit back and enjoy.
