This plaited loaf was inspired by a recipe for bread sticks that I saw on a cooking programme. I changed and added a few ingredients to make a curried loaf, with an attractive marbled effect. Based on the brands I used, each slice is about 99 calories.
Preparation Time: 3 hours
Cooking Time: 40 minutes
Makes: 1 loaf
Ingredients
500g white bread flour
30g wheatgerm
½ red bell pepper
300ml water
7g fast action yeast
½ tsp salt
½ cumin seeds
½ tsp chilli powder
1 tbsp turmeric
1 tbsp paprika
Method
Mix the flour salt and yeast together, then divide equally into two separate bowls.
In one bowl add the wheatgerm and in the other, add the spices and red pepper.
Add 150ml water to each bowl until you form two doughs.
Knead each one for five to ten minutes.
Leave them to prove for an hour.
Roll the doughs into two long sausage shapes.
Plait them together, then leave to prove for another hour.
Bake in an oven pre-heated to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
