Mexican Rice Bake

Vegetarian recipes don't need to be complex or bland, and this dish is a perfect example of how tasty and easy veggie meals can be. It's easily thrown together and makes a truckload, so it's an ideal family meal when you're short on time and money.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 6 - 8 servings

Ingredients
1/2 brown onion
2 cloves garlic
2 chillies
5 - 6 button mushrooms
1 capsicum
1 tin Mexican beans (I use Coles brand)
1 tin diced tomatoes
1 1/2 cups rice
3 cups boiling water
2 tsp paprika
2 tsp cumin powder
2 tsp pepper
1/2 cup grated cheese

Method
  • Pre-heat oven to 180 degrees Celsius.
  • Combine water and rice in a large microwave-proof bowl and cook for 10 minutes in the microwave.
  • Dice onion, finely chop garlic and chillies and slice capsicum and mushrooms.
  • With a splash of oil, gently fry onion, garlic, chillies, capsicum and mushrooms in a large frypan until onion is browned and mushrooms have softened.
  • Stir in spices.
  • Add tinned beans and tomatoes. Simmer gently until rice is cooked.
  • Combine rice and contents of frypan in a large baking dish and top with cheese.
  • Bake for 10 minutes or until cheese has melted.
