Mexican Rice with Basa

This Mexican rice is a fast and easy dinner that is packed full of flavour. You can change the spices to suit your family, I often add chilli and use a green capscium instead of a red one depending on what is in my fridge at the time.


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients
1 onion, sliced thinly
1 red capsicum, deseeded and sliced thinly
2 cloves garlic , crushed
2 tbs oil
1 cup corn and/or peas
1 1/2 cups white rice
2 tsp smoked paprika
2 tsp ground cumin
1/3 cup tomato paste
3 1/2 cups vegetable stock
500 g basa, cut into bite sized pieces
salt and pepper, to season

Method
  • Heat the oil in a large saucepan over medium heat. Add the onion, garlic, capsicum and corn. Cook until the onion is soft.

  • Add the paprika, cumin and rice and stir to combine. Add the stock and tomato paste and bring to the boil.

  • Reduce heat, cover and simmer for 12 minutes. The rice will absorb the liquid.

  • Stir through the basa then cover and cook for 2-5 minutes until the basa is cooked.
  • Season with salt and pepper then serve.
