Microwave Choc Chip Cookie

Nothing comes closer to ultimate indulgence than a single serve, gooey choc chip cookie that you can make - in the microwave - in a total time of about 5 minutes. This is definitely a guilty pleasure, that can be made anytime, day or night, for those sneaky times when you just need some you time. Curl up on the couch, in front of the fire, in bed with a good book, or with someone to share your 5 minute cookie - the ultimate sometime food.

Preparation Time: 3 minutes
Cooking Time: Under 1 minute
Makes: 1 servings (2 is you share)

1 tablespoon of butter
1 tablespoon of caster sugar
1 tablespoon of brown sugar
1/8 teaspoon of vanilla essence
A pinch of salt
1 egg
3 tablespoons of plain flour
2 tablespoons of chocolate chips or chopped chocolate (a mixture of milk and white chocolate was used here, but use your favourite! Caramel choc chips also come highly recommended).

There are 2 options to mix all of the ingredients together: either mix the ingredients directly in the (microwave safe) ramekin or mug in which the cookie will be cooked in, or mix everything together in a bowl then pour the contents into the ramekin or mug. I chose to mix everything in a separate bowl so that the sides of the ramekin remained neat and tidy.

Place the butter in a mixing bowl (or into the ramekin if mixing directly) and melt in the microwave for a burst of 30 seconds. Mix to melt the remaining butter.

Add the caster sugar, brown sugar and vanilla essence to the melted butter and stir to combine.

Add the salt and the egg, and mix well until all of the egg is combined into the mixture.

Add the flour and stir until combined into a smooth, cookie dough-like consistency.

Fold the chocolate pieces into the cookie dough, keeping some leftover to sprinkle over the top of the cookie.

If mixing in a separate bowl, pour the cookie mix into a microwave safe ramekin. Sprinkle the top of the cookie with additional chocolate pieces.

Microwave, on medium power or 70%, for 30 seconds. Remove the cookie from the microwave. If the cookie is still undercooked, give it 10 second bursts in the microwave until cooked. The cookie will continue to cook within itself on standing, so any more that 1 minute in the microwave is most likely to overcook the cookie.

Serve on its own, or add a scoop of ice cream to the top of the cookie. Devour.
