Spotted Dick is a British pudding, so named because the vine fruits give it a spotted appearance. As for the amusing double entendre, the word 'dick' is thought to derive from the original word for pudding 'puddink' and 'puddick'.
Traditionally spotted dick is made with suet, requires several hours steaming, and serves a whole family. This, recipe, however, is suitable for vegetarians, is very quick to make, and perfect when cooking for one.

Ingredients
25g margarine
25g self-raising white flour
25g sultanas
1 tsp Truvia sweetener (or 25g caster sugar
1 egg
1 tsp vanilla extract
1 tbsp water
Method
Heat the sultanas in the microwave on high for thirty seconds in a tablespoon of water and then drain.
Beat all the ingredients together, and then pour the mixture into a small greased pudding basin.
Heat in the microwave on high for two minutes and then turn out and serve with either cream or custard.
