Lightly spiced with cardamom and rose water these walnut based cookies smell exotic while baking and are a tasty treat. They are great with a cup of
Greek coffee or wrapped as a gift.

Middle Eastern spiced cookies
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 34 cookies
Ingredients
2 cups walnuts (reserve 1/2 cup to decorate)
2/3 cup caster sugar
3 egg yolks
1 tbsp cardamom
1 tsp bicarbonate soda
1 tbsp rose water
Method
Preheat oven to 180 degrees. Line 3 baking trays with baking paper.
Place 1 1/2 cups walnuts into a food processor and blend until a crumb is formed.

Add the sugar, egg yolks, cardamom, bicarbonate soda and rose water and blend until combined.

The cookie mixture is extremely wet when combined
Using wet hands, roll teaspoon sized balls of the cookie dough and place on a baking trays. Allow 5 cm gaps between the balls to allow the cookies to spread.
Press a walnut into the centre. Bake for 15 - 20 minutes or until golden brown. Cool on wire racks.

The walnuts in the centre are great decoration and give a nice crunch
Serve with a cup of tea for a great Middle Eastern treat.
